The Ballarini Tevere Santoku knife offers a wonderful symbiosis of Far Eastern knife expertise and Western design. The Japanese knife has an 18 cm blade and is an all-purpose knife. You can use it for cutting meat, vegetables and fish. The main difference between a santoku knife and a conventional chef’s knife is the blade’s hollow ground edge, which means fewer ingredients stick to the blade when chopping.
